Cookies:

1 cup mashed, cooked carrots
¾ cup sugar (sugar substitute for SF option)
1 cup shortening
2 eggs
2 cups self-rising flour
¾ cups shredded coconut

Icing:

2 cups powdered sugar (can use SF option)
⅓ cup soft margarine
1½ tsp vanilla
2 tbsp cold milk
1 cup chopped nuts (chopped very fine)

Directions:
Directions:
Mix all ingredients for cookies together and spoon drop onto greased cookie sheet. Bake for 10-15 min. Transfer cookies to a cooling rack and let cool completely.

Mix all icing ingredients together and ice cookies then dip into chopped nuts.
