1 lb. lean ground beef – can use ½ lb. beef and ½ lb. Italian sausage
1 yellow onion – diced
4-5 garlic cloves – minced
½ tsp. red pepper flakes
24 oz. jar marinara sauce
Large box chicken broth – more or less until you reach desired consistency
½ C. heavy cream
2 T. tomato paste
1 T. dried basil
1 tsp. dried parsley
1 tsp. dried oregano
1 tsp. salt
½ tsp. pepper
Bay leaf
10 uncooked lasagna noodles – broken into 1-2-inch pieces
Parmesan and Ricotta cheese mix - shredded

Directions:
In a large soup pot, cook the ground beef and onion, stirring occasionally until beef is browned. Add garlic and red pepper flakes and sauté for 30 seconds. Drain off excess fat. Add marinara sauce, spices, and bay leaf. Next add heavy cream and chicken broth. Break up lasagna noodles into pieces and add to soup. Bring to a boil then reduce to a simmer for 20-30 minutes until lasagna noodles are tender, stirring occasionally. When ready to serve, add desired amount of cheese.
