¼ c. margarine
¼ c. shortening
1 cut-up chicken or 4 boneless chicken breasts
½ to 1 c. flour
salt and pepper.

Directions:
Directions:
Set oven to 425º.
Melt margarine & shortening in cake pan in the oven. Watch closely as it burns easily!
Add flour, salt & pepper to a bag. Add chicken pieces and shake in bag to coat the chicken with the flour.
Put chicken in pan, skin side down.
Bake ½ hour on each side.

If you want to use skinless chicken, I would say to turn the oven down to 375º or 400º and cover the pan with foil. You can remove the foil the last 5 or 10 minutes in the oven so the chicken can brown a little.
