Salmon fillet(s) – 4 to 6 skinless fillets (4-6 oz. each)
Dry Sugar Rub:
2 T. sugar
1 T. chili powder
1 tsp. black pepper
1/2 T. ground cumin
1/2 T. paprika
1/2 T. salt
1/4 tsp. dry mustard
Dash of cinnamon

Directions:
Directions:
Blend all ingredients for dry sugar rub and generously coat one side of each salmon fillet. (This rub is enough for a big 3-4 lb fillet. When preparing a large fillet for guests, rub the fillet and then slice it into individual serving pieces before baking.)
Cooking options:
Bake: place fillets in a sheet pan rub side up in oven at 400º for approx 15-20 minutes. (Approximately 20 minutes for a fillet 1 inch thick.)
Grill: place fillet on soaked cedar plank over indirect heat of the grill. Grill approximately 15-20 minutes.
Pan Fry: heat 1 T. canola oil in fry pan over medium-high heat. Place salmon rubbed side down in pan. Cook about 2 minutes to sear then turn fillets over. Reduce heat and cook for another 6-8 minutes. Cook just until fish is opaque throughout. Serves 4-6.

The dry sugar rub is also excellent on pork chops and chicken! Make the rub ahead and keep on hand in your pantry. I use this rub as a gift - make a big batch and place in a glass jar. Give the rub, recipe and a cedar plank as a gift. It's a perfect gift for a man, a hospitality thank you, or to welcome a new neighbor.
