1/2 lb (about 7 slices) bacon, sliced into 1/2-inch pieces
1 onion, diced
3 cloves garlic, minced
2 pounds fresh green beans, I used large / over grown (left too long in the garden)
3 cups low sodium chicken broth
1 cup water
1 tsp kosher salt
2 tsp black pepper
1 tsp garlic powder
1 pinch cayenne pepper or crushed red pepper (optional - I didn't use)

Place large saute pan or saucepan over medium heat; cook and stir bacon in the hot pan until crisp and most of the fat has rendered off, about 6 minutes. Remove bacon and set aside. Add onion to the bacon fat in the pan; cook until onion is soft and golden brown, about 5 minutes. Stir in garlic and cook an additional 1-2 minutes.

Add green beans to skillet and pour in chicken broth, water, salt, pepper and garlic powder. Raise heat to high and bring to a boil. Reduce heat to medium-low and simmer for 2 hours. Stir occasionally. Add more broth or water if mixture seems dry.

Add crispy bacon back to the beans and adjust seasoning if needed.
