3 cups (about 2 large cans) mashed hot sweet potatoes
¼ cup melted butter
1 cup brown sugar, divided
¼ cup orange juice
¼ cup chopped pecans
¼ cup grated coconut (optional)
½ cup cornflakes, crushed
2 cups mashed bananas

Directions:
Directions:
Mix above ingredients except for bananas. Place half the potatoes in an 8 inch shallow baking dish. Cover with banana and other half of potato mixture. Top with crushed cornflakes and ½ cup brown sugar. Dot with butter. Bake 25 minutes at 275º.
