Ingredients: 1 16 oz. box Elbow Macaroni 2 cups Shredded Sharp Cheddar Cheese 2 cups Shredded Mild or Cheddar Cheese 1 12oz Can Evaporated Milk 12 oz Whole Milk (or 2%) 2 Eggs 1/2 tsp. Ground Mustard salt and pepper

Directions:Boil elbow macaroni in salted water until almost done. Drain. In the pot you boiled the macaroni in, add 3 cups cheese. Reserve 1 cup mild cheese for topping. Add both milks. Mix together. Slightly beat the eggs and fold into the macaroni mixture. Add ground mustard and 1/2 teaspoon each salt and pepper. Pour into crockpot and cook on high for 1 1/2 hours. At this midway point, give it a stir and put reserved cup of cheese on top. Turn to low for remaining 2 hours. Total cook time 3 1/2 hours. Serve immediately.
*Spray crockpot with cooking spray. *You can also add 1/2 block of cream cheese to make a creamier version of this recipe. |
