"As I ate the oysters with their strong taste of the sea and their faint metallic taste that the cold white wine washed away, leaving only the sea taste and the succulent texture, and as I drank their cold liquid from each shell and washed it down with the crisp taste of the wine, I lost the empty feeling and began to be happy, and to make plans."--Ernest Hemingway

Ingredients:
Ingredients:
4 Fresh Lobster Tails (each should weigh 6 to 8 oz)
4 tbsp unsalted butter, melted
3 cloves garlic, minced or pressed
1 tsp sweet or smoked paprika
½ tsp freshly ground black pepper
1 tbsp lemon juice
1 tbsp chopped fresh parsley
Lemon wedges, for serving

Directions:
Directions:
1) Prep. Thaw the lobster tails if they are frozen. Set the oven rack 4 to 6 inches from the heat and preheat the broiler. Line a baking sheet with parchment paper and place the lobster tails on the baking sheet.
2) Prepare the lobster tails. Using kitchen shears, cut straight along the middle of the top of the lobster shell towards the fins of the tail; do not cut through the fin. With your fingers, gently open up the shell and pull up the meat from inside the shell; do not detach it. You can also use a spoon to separate the meat from the two sides of the shell. Close the empty shells together and rest the meat on top of the seam. Set aside.
3) Make the garlic butter sauce. In a mixing bowl, combine the melted butter, garlic, paprika, salt, pepper, lemon juice, and parsley; whisk to combine. Brush the tops of the lobster tails with the butter mixture. (Optional: make more sauce for dipping)
4) Cook. Broil the tails for about 6 to 8 minutes, or 1 minute per 1 oz of lobster, and until the lobster meat is opaque and sturdy.
5) Finish and serve. Remove from oven. Serve with lemon wedges and more butter sauce.
