5 tsp. extra virgin olive oil, divided
3 oz. Pancetta
1 tbl. butter
2 golden delicious apples, sliced
½ tsp. sugar
4 center cut, bone in, pork chops
1 ¼ tsp. salt
1 tsp. freshly ground pepper
1 onion, chopped
2 tsp. fresh thyme, chopped
¼ c. brandy
¼ c. apple juice
½ c. cream

In a large skillet heat 2 tsp. oil over medium-high heat. Add bacon and cook until crispy and light golden, about 3 minutes. Remove from pan and set aside on paper towels to drain. In the same pan, melt the butter. Add the apples and sprinkle with the sugar. Cook until soft and deep golden brown, stirring frequently, about 5 minutes. Transfer apples and juices to a small bowl.

Sprinkle both sides of the pork chops with 1 tsp. of the salt and ¾ tsp. of the pepper. Add 2 tsp. of oil to the pan and brown the pork chops, 2 minutes per side. Remove the chops and cover to keep warm. To the pan add the remaining oil, onions, thyme, brandy, apple juice and cream and bring to a simmer. Return pork chops to the pan, top with the apples and simmer until chops are cooked through and sauce is reduced, 10-12 minutes. Season sauce to taste with the remaining salt and pepper.

Serve garnished with the reserved pancetta bits.
