1 lb ground beef, browned and drained
1 (32oz) has spaghetti sauce
9 lasagna noodles, uncooked
12oz cottage cheese
2 c. shredded mozzarella cheese
2 eggs
1/3 c. parsley, chopped
1 tsp. onion powder
1/2 tsp dried basil
1/8 tsp. pepper
1/4 c. water
Grated Parmesan cheese

Directions:

Mix browned ground beef and spaghetti sauce.
Mix in a large bowl until blended: cottage cheese, mozzarella cheese, eggs, parsley, onion powder, basil and pepper. Set aside. In 9 x 13 baking dish, spread 3/4 cup meat sauce. Layer 3 uncooked noodles on top of sauce. Spread 1/2 of cheese mixture then 1/2 of the meat sauce. Layer 3 more noodles. Spread with remaining cheese mixture. Top with last 3 noodles and then remaining meat sauce. Pour water around edge of casserole. Cover with foil. Bake at 375º for 45 minutes. Uncover, sprinkle with Parmesan cheese and bake 15 more minutes or until noodles are tender.

Variations I have used over the years:
shedded cheddar or co-jack with or in place of the mozzarella; fresh chopped onion in place of powder;
Italian seasoning in place of parsley and basil; add in garlic powder;
Can also be made a day ahead and refrigerated, you can then reduce cooking time as the noodles will have softened.
