Single Crust:
1½ c. all-purpose flour
½ tsp. salt
¼ c. shortening
¼ c. butter, diced, keep cold until using
¼ - ⅓ c. ice cold water, 1 tbl. at a time

Double Crust:
2½ c. all-purp½ose flour
1 tsp. salt
½ c. shortening
¼ c. butter, diced, keep cold until using
½-⅔ c. ice cold water, 1 tbl. at a time

Directions:
Directions:
In a medium bowl stir together flour and salt. Using a pastry blender, cut in the shortening and butter until pea sized. Sprinkle 1 tbl. ice water over part of the flour mixture and toss with a fork. Push moistened pastry to side of bowl. Repeat moistening flour mixture sections with ice water, 1 tbl. at a time, until all of the flour mixture is moistened. For single crust: gather pastry into a ball and knead gently until it comes together. For a double crust: divide pastry into two balls and knead each gently until they come together.

Keep dough refrigerated until ready to use. Use the pastry according to any pie recipes.
