1lb. of your favorite pasta like fettuccini or rotini
¼ c. butter or margarine
¼ c. olive oil
9+ oz. or 2+ c. beef or pork cut into thin strips (London Broil is easy to slice, but now, precut options are avail in stores)
1 tsp. dried basil
¼ tsp. dried oregano
½ tsp. salt
¼ tsp. pepper
½+ c. chopped parsley
2-3 lg. tomatoes, diced
¾+c. grated Parmesan cheese

In a large pot, start the pasta cooking. In a large frying pan, heat the butter and olive oil. Add meat and cook over medium to medium-high heat, stirring frequently until the meat is well browned and getting crispy, draining the liquid off once or twice. (This can take 10 or more minutes). When the meat is done, add basil, oregano, salt, pepper and about half of the parsley and half the tomatoes. Cook until tomatoes become juicy, 2-4 minutes. Drain the pasta, return to the the large pot and add the remaining parsley and tomatoes. Pour the meat mixture over the pasta. If it is too dry, add a little butter and/or olive oil. Add the Parmesan cheese and mix well. Taste - you might want to add extra Parmesan. Serve with additional grated Parmesan.

Very forgiving recipe - experimentation is allowed. Works well with leftover meat, although we prefer fresh. Makes great leftovers! We all love this so much we always double the recipe.
