2 1/2 cups of potatoes
6 cups Shredded or chopped chicken or one whole chicken(we use Sam's Club rotisserie chicken).

8 cups of chicken stock
1/2 tsp dried thyme
1 cup half and half
3 T cornstarch
1/4 cup cold water
2 cups frozen peas and carrots

Directions:
Directions:
Cut potatoes into small 1" cubes or pieces. Then boil them in chicken stock until fork-tender. While potatoes are cooking, add dried thyme, salt, and pepper to taste. We used Kinders' roasted chicken seasoning. When potatoes are done, add half and half and shredded or diced chicken, then bring to a simmer. Mix 3 T of corn starch with 1/4 cup of cold water and set aside. Once a simmer is achieved, add the slurry of cornstarch and water. Soup will thicken. Then add frozen peas and carrots. Serve once peas and carrots are warmed through.
