1 lb chicken wings separated
2 tbsp olive oil
2 tablespoons (or more) Szechuan Spice Mix (recipe in this book)

Preheat over to 425º
1. Separate chicken wings, toss out the tip.

2. Wash and pat dry chicken wings.

3. Place wings in large zip lock bag, add oil and shake to cover.

4. Place chicken wings on large cookie sheet covered with aluminum foil.

5. Sprinkle Szechuan spice on wings, coat well. Alternatively, you can add the spice to the zip lock bag and shake to cover.

6. Place in 425º oven, bake for 25 minutes or until your favorite level of crispiness is achieved.

There are several ways to do this recipe and it is all up to your preference.

Use as much or as little spice mixture as suits you.

If you like them really crispy, turn the heat down to 375º and cook longer.

If you like them drier, place them on a rack on your cookie sheet, that way they won’t sit in the grease.

You also don’t have to sue the olive oil. You can just wash the wings, skip the pat dry, shake them in a bag with the spice, then cook as you wish.
