1 box long grain wild rice
1 c. pecans toasted and chopped
juice of 1 lemon
3 cooked chicken breasts (diced)
4 green onions diced
1 red pepper diced
3 ounces of chinese pea pods(remove stems)
2 medium avacados
2 cloves garlic
1 T. dijon mustard
1/2 t. salt
1/4 t. sugar
1/4 t. pepper
1/3 c. rice wine vinegar
1/3 c. vegetable oil

Directions:
Put dressing on cool rice. Mix all other but pecans and avacados. Marinate for 2 hours right before eating, add pecans and avacados.
