1.5 cups yellow squash
1.5 cups zucchini
1 cup potatoes
1 cup sweet onion
1 cup heavy whipping cream
1/4 cup butter
8oz panko bread crumbs
2 cups med cheddar cheese
1/4 tsp salt
1/4 tsp pepper
1/4 tsp nutmeg

Directions:
1)Preheat oven to to 350º. You will need a 10x13 baking dish.
2)Thinly slice squash, zucchini, potatoes, and onions.
3)In a cup mix the heavy cream, salt, pepper and nutmeg. Set aside.
4)In a medium bowl, melt the butter and combine the with the panko. Set aside.
5)Spray baking dish with Pam and begin making a thin layer of each vegetable. Should use about half of the vegetables. Take a paper towel and lay it on top of vegetables and pack the layer down and dab any excess any extra water off.
6) Use half the cheese to make the next layer and top it with 1/2 the panko mixture. Followed by drizzling up to 1/2 the heavy cream mixture over the casserole. You want enough to have a very small amount over most of the top, but not so much it would become soggy.
7)Repeat the process for a second layer.
8) Bake @350º for 1hr 15min or until tender. If topping starts to become too brown, cover with foil.
