Non-stick cooking spray
4 lg. baking potatoes
1/4 c. chopped parsley
1 lg. clove garlic (crushed)
1/2 tsp salt
1/2 tsp dried thyme leaves
1/4 tsp pepper
1 1/2 c. Swiss or mozzarella cheese
1 c. chicken broth

Directions:
Directions:
Preheat oven to 400°F. Grease 1 1/2 qt baking dish with cooking spray.
Peel & thinly slice potatoes. In bowl, toss potatoes, add parsley, garlic, salt & pepper.
In buttered baking dish, layer potatoes alternating layers of potatoes and 1 c. of cheese, beginning and ending with potatoes. Add broth.
Cover with foil. Bake 30 minutes.
Remove foil; bake 30 minutes longer. Sprinkle with remaining cheese, bake until potatoes are tender, about 15 minutes.
