4 bunches or 2-1lb bags Collard Greens ( washed), julienned or chopped
2 Smoked Neckbones (about 1½ lbs. total
3 c. Water plus more if needed
1 14oz. can Chicken broth
½ c. Onion, chopped
2 tbsp. Apple cider vinegar
1 tsp. Crushed red pepper
1 tsp. Olive oil
½ tsp. Butter
Kosher salt or Seasoned salt
Black pepper optional

Directions:
Fill your sink with lukewarm water add collard greens and ½ tsp. salt, using your hands swish greens around removing any unwanted debris.

Drain, then rinse greens with cold water around 1 minute, let drain for a few minutes

Using a large pot add 2 cups of water and the smoked neckbones, bring to a rapid boil for 3 minutes.

Carefully add remaining ingredients to boiling water and neckbones
Cover and cook around 45 minutes or more if needed, season to taste.
Once greens are tender, remove from heat.

Using a large fork pull some of the meat from the neckbones, stir to incorporate the meat into the greens. Let sit for 3-5 minutes

Serve hot
