1 pound rotini past, cooked
1 ½ - 2 cups diced roasted chicken
1 small yellow onion, diced small
1 cup celery, diced small
1 cup slivered almonds, roasted
1 ½ cups dried cherries or cranberries, cut in half

Dressing:
⅔ cup powdered sugar
2 ½ cups Helllman's mayo
2 ½ tablespoons champagne vinegar
2 ½ tablespoons cold water
2 ½ teaspoons kosher salt
¾ teaspoon black pepper
2 ½ tablespoons poppy seeds

Cook pasta, drain and place in large bowl; add all the pasta ingredients. In a small bowl, whisk all the dressing ingredients well and set aside. Pour dressing over pasta and mix well. This is a minimum one day ahead salad. Cover and place in refrigerator overnight to allow flavors to marry. Stir well prior to serving. Keeps well for up to five days.

Roast chicken:
Place boneless, skinless chicken breast on large piece of foil; salt and pepper. Place packet on a cookie sheet and bake in preheated 350º oven for 4o minutes.

Roast almonds:
Place slivered almond in a small nonstick pan on low, keep moving the almonds around for about 5 minutes. May get slightly born, careful not to burn.

NOTE: Overnight in refrigerator is an absolute; does not taste good when first made!
