Shrimp and Cheesy Grits Recipe

3 c. chicken stock
3 T. heavy cream
Kosher salt
1 c. white speckled Nora Mills "GA White Ice Cream" Grits (or Martha White)
3 T. unsalted butter (not margarine)
8 oz. pkg. finely shredded sharp cheddar cheese (2 cups)
8 slices of thick sliced bacon - cut in 1 to 2 inch pieces
32 oz. pkg. frozen large cooked shrimp
black pepper
2-3 garlic cloves, minced (1 heaping tsp.)
3 T. of Italian flat leaf parsley
4 green onions, finely chopped, divided
1 tsp. smoked paprika
1 T. Lea and Perrins Worcestershire sauce
4 tsp. fresh lemon juice (usually one whole lemon)

Cook the bacon and put to the side on a paper towel. Save bacon grease for later use
Grits: In a saucepan, bring the chicken stock to a boil. Add the kosher salt and bring to a boil again. Whisk in the grits and cook over moderately high heat to avoid lumps. Continue to stir periodically until thickened and the grains are tender. About 4 - 5 minutes. Careful not to let it burn. Add the butter and stir into the grits. Add the cream and cheese and gently stir until all of the cheese is melted and the grits are covered. Cover and remove from the heat.
Shrimp: Run cold water on the shrimp to defrost. Remove tails and set aside. Into a skillet with the bacon grease add the garlic, parsley, green onions, and paprika. Add the Worcestershire and lemon juice. Sauté the mixture until tender. Sprinkle black pepper on the shrimp and add to the mixture.
Serve: Spoon warm, cheesy grits into a shallow dish or onto individual plates, top with the shrimp mixture. Garnish with the bacon and the reserved chives. Add a sprig of parsley on top. Serves 4-6.

I've had cheesy shrimp with grits in several really good restaurants, but this is the best recipe I've ever tasted! It's really delicious. It was first served by a friend at a get-together of women friends in Utah, and we all asked for it again and again every time we got together!
