1 lb bacon (more for topping if desired).
1 small yellow onion
2 tsp minced garlic
4-5 cups cubed potatoes (we use Yukon Golds, so we don't have to peel them.)
2 T butter
1/4 cup of flour
4 cups of chicken stock
1 1/2 cups of half and half
1 T Kinders SPG
1 T Kinders Cowboy Butter
1/2 cup sour cream

Directions:
Directions:
Cut bacon into small, bite-sized pieces and brown in a stock pot until crispy. (While bacon is cooking, you can do your other cuts like the onions and potatoes.) Once the bacon is crispy, drain it and remove it. Be sure to leave enough bacon grease in the stockpot (approximately 1-2 T.)to saute your onion and garlic. Sauté onion until translucent, then add garlic and saute for 2-3 additional minutes. Add butter and flour and cook for 1-2 minutes. Then whisk in chicken stock. Then add half and half and your potatoes. Add Kinders SPG, Cowboy Butter, and sour cream, and let simmer until potatoes are tender. Optional toppings: Chives, bacon, sour cream, cheese, or whatever you like on your baked potato!

If you like a thicker, creamier soup, you can immersion blend, or if you like it chunkier it will be good as is.
