1 lb boneless chicken breast halves
1 tablespoon oil
2 cups chicken broth
1 tablespoon grated lemon peel
4 cups rotini pasta, uncooked
1 cup halved cherry tomatoes
1 green pepper, cut into thin strips
1 cup grated Parmesan cheese

Directions:
Directions:
If present, remove the skins from the chicken breasts.
Cut the chicken breasts into thin strips.
Cook and stir the chicken in hot oil in a large skillet on medium-high heat for 5 minutes or until the chicken is lightly browned.
Add 3 cups water, chicken broth and lemon peel; mix well.
Stir in the pasta; cover. Bring to a boil. Reduce the heat to low; simmer 15 minutes or until the pasta is tender.
Stir in the tomatoes and pepper strips; cook an additional 5 minutes or until the chicken is cooked through and the vegetables are crisp-tender.
Add the cheese; toss lightly.
Remove it from the heat & serve when the cheese has melted.
