Dry rub:
1 tbs onion powder
1 tbs garlic powder
2 tsp cayenne pepper
2 tsp salt
2 tsp ground black pepper
2 tsp dried thyme (or fresh, chopped)
2 - 4 tsp sugar
1 tsp allspice
1 tsp dried parsley (or fresh, chopped)
1 tsp paprika
1/2 tsp pepper flakes
1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
1/2 tsp ground clove
1/4 tsp cumin

Marinade:
Red onion chopped
4 - 6 cloves garlic, crushed
1/4 cup soy sauce
1/4 cup apple cider vinegar (I use raw vinegar with the mother)
2 tbs olive oil
3/4 cup - about 1 orange - freshly squeezed
1 lime - freshly squeezed
1 tbs grated ginger
1/2 cup brown sugar
1 tsp nutmeg
1 tsp allspice
1 tsp cinnamon
1 tsp thyme (fresh if available)
salt and pepper

1 Red Stripe Beer - can not substitute the brand

Directions:
Directions:
Combine dry rub ingredients and rub on chicken.

Mix the marinade and add to the chicken.

Note - if this is too much spice, omit the dry rub.

Marinate at least a few hours.

Grill. When the chicken begins to get browned, Douse with the beer several times during the grilling process.
