Buttermilk Pancakes Recipe

1½ cups flour
6 Tbsp sugar
2½ tsp baking powder
2 tsp baking soda
3 eggs
1½ cups buttermilk
1½ tsp vanilla
½ cup butter, melted

(Optional - ¾ cup blueberries, or mini chocolate chips)

Melt butter and set aside to cool.

In a small bowl, combine flour, sugar, baking powder and baking soda; mix well.

In a large bowl, combine eggs, buttermilk and vanilla; mix well. Add the butter and mix well. Add the dry ingredients and mix just until combined. There may be a few lumps. (Do not overmix.)

Heat griddle to 375ºF or skillet over medium heat. For each pancake, pour ½ cup batter onto the hot griddle. (Optional, at this point, you may sprinkle blueberries or mini chocolate chips onto the cooking pancake batter.) Cook for 3-5 minutes or until bubbles appear on the surface of the pancakes. Turn pancakes and cook an additional 2-3 minutes or until light golden brown. Serve immediately.

These pancakes were served at Christmas breakfast and at our annual trivia contest by Uncle Matt and Aunt Amy. They served these pancakes with strawberries and whipped cream. Delicious!
