2-1/2 lbs. crabmeat (real or imitation)
2-1/2 c. milk
2-1/2 T. rounded, chopped onion
1 stick butter (1/2 c.)
2 eggs (beaten with a small amount of milk)
2-3 pinches of parsley (fresh)
1-2 shakes red pepper
4 tsp. Worcestershire sauce
salt to taste (1-3 shakes)
2 c. flour and water made into a paste
bread crumbs for dipping the crab cakes.

Directions:
Sauté onion and butter together (do not brown) Add parsley, salt, pepper, 1/3 c. crab meat and milk. Bring to a boil. Thicken with 2 c. flour and water made into a medium paste. Add to boiling mixture and mix until it stays on the spoon. Add the rest of the crab meat and Worcestershire sauce. Let cool. When cool, form into cakes. In a small bowl beat (2) eggs with a little milk. Dip the crab cakes in bread crumbs, then dip the crab cake in the beaten eggs/milk mixture, then re-dip the crab cakes back into bread crumbs. Deep fry and eat.
