2 T. butter
2 T. flour
2 cups heavy cream
1 lb. shredded Extra Sharp Cheddar Cheese
½ lb. shredded Monterey Jack Cheese
1 - 2 tsp. hot sauce
2 T. all-purpose seasoning
1 cup mayonaise
1 cup sour cream
12 oz. elbow macaroni - cooked until just tender
½ cup panko
1 pkg. bacon (cooked)

Heat smoker/grill to a steady 350º
Cook pasta.
In a sauce pan, melt butter. Add flour to make a roux. Add ½ cup heavy cream. Stir, cooking until sauce thickens. Add remaining cream and stir until smooth and thickened. Slowly stir in cheese. Add hot sauce.
Mix the pasta, sour cream and mayonaise. Put in a smoker safe casserole. (black iron skillet is perfect). Mix in the cheese sauce.
Combine panko and bacon. Spread accross the mac and cheese. Place in smoker/grill until heated through.

This became a Game Day staple. Dave and Rebecca would team up with the smoker to create this yummy comfort food. GA Dawgs, FSU Seminoles, Clemson Tigers and S.C. Gamecocks could agree on this one thing. YUM!
