1.5 lb sweet potatoes
2T olive oil
1/22 t salt
1/4 t pepper
1/2 t cumin
2 c cooked quinoa
1 (15oz) black beans rinsed and drained
1 (15 oz) whole kernel corn rinsed and drained
1 small red onion chopped

for dressing
4 T olive oil
3 T lime juice
1/4 t cumin
1/4 t paprika
1/4 t pepper or chili powder
1 t minced garlic
1/2 Tajin seasoning optional

Preheat oven 400
Line baking sheet with parchment paper
peel sweet potatoes. Slice into 1.2 inch think dick and cut each into 4 - 6 pieces
place potatoes on parchment paper, drizzle with olive oil and season with salt, pepper, cumin. Toss to coat. Roast 20 - 23 minutes, remove from oven and cool

In large bowl, combine corn, black beans, chopped red onion, quinoa and potatoes

in small bowl whisk together all dressing ingredients. Pour over salad and toss
