10" angel food cake (Granny preferred homemade)
1 tT unflavoured gelatin
¼ c. cold water
6 eggs, separated
¾ c sugar (or ⅔ c also works)
1½ t grated lemon peel
¾ c lemon juice (or ⅔ c)

2 c heavy cream, whipped with ¾ c sugar

Directions:
Directions:
Combine gelatin and water; set aside to bloom.
Beat yolks; add sugar, peel, and juice; cook in double boiler until it coats a metal spoon. Remove from heat and stir in gelatin mixture. Cover with saran and chill until partially set.
Stiffly beat egg whites; beat in sugar. Fold into gelatin mixture.

Method 1:
Tear cake into pieces; arrange ¼ of the pieces in tube pan; pour in ⅓ filling. Repeat.
Chill until firm.
Turn out onto serving plate; frost with whipped cream.
Keep chilled until served.

Method 2 (Granny's favourite but not as easy):
Cut cake horizontally into 4 layers.
Fill each layer with filling spreading remainder over top and sides.
Frost with whipped cream.
Keep chilled until served.
