1 Crumb or Baked Pie Crust
½ c. Lemon Juice
1 tsp. grated Lemon Rind or ¼ tsp. Lemon Extract
1 can Eagle Brand Milk
2 Eggs, separated
¼ tsp. Cream of Tartar
4 tbsp. Sugar

Directions:
Directions:
Combine lemon juice and lemon extract; stir in milk.
Add beaten egg yolks.
Stir until well blended.
Pour into crust.
Add cream of tartar to egg whites; Beat until stiff, add sugar.
Pile on pie filling.
Bake 325º about 15 minutes.
Until lightly brown.
