Ingredients: Crust: 1 ½ c graham cracker crumbs (12 full sheets) ⅓ c sugar 6 T butter, melted 1 t cinnamon
Filling: 1 14 oz cans sweetened condensed milk 4 oz cream cheese, softened ¾ c key lime juice (available in juice aisle) zest of 2 limes (no need to double this if you are double the recipe)

Directions:Preheat oven 350º
Crust: Blitz graham crackers in food processor. Add to bowl with cinnamon, sugar and butter. Mix well. Press into 8 in baking pan. Note: I always double this recipe and use a large baking sheet. Bake for 10 mins. Remove from oven and let cool.
Filling: Beat cream cheese until smooth. Add condensed milk, lime juice, and zest. Mix until smooth.
Pour over prepared crust and bake for an additional 10 mins. Cool for 30 mins or more, then refrigerate or freeze until serving. |

Notes: This recipe is always a hit. Place the entire pan in the freezer and allow to freeze well. Cut into bars and then layer bars in tupperware using parchment to separate layers. They are best when served straight from the freezer.
Good to have for unexpected guests! Stay fresh up to 3 months.
