2 lbs. pork tenderloin cut into 2” cubes
2 Tbsp. Cooking oil
2 cloves garlic, minced
2 cup of fresh poblano peppers finally chopped.
1 cup finally chopped white onion.
2 Tbsp white wine vinegar or rice, wine vinegar.
1/4 cup teriyaki sauce.
1 tsp. Crushed red pepper flakes.
1/2 cup water
1/4 cup creamy peanut butter
3 sliced green onions.
1/4 cup finally chopped peanuts (optional)

Directions:

In large skillet, brown meat in cooking oil.

Add remaining ingredients except peanut butter, green onions, and chopped peanuts

Simmer covered 1 and 1/2 hrs. On stove, stir in 1/2 cup of water simmer over low heat for another 1 and 1/2 hrs. Or until meat is very tender.

Remove skillet from heat while meat is still in skillet shred the meat using two forks to pull apart. Stir in peanut butter.

Serve over rice, garnish with chopped onions and chopped peanuts
