1 head garlic (about 1/4 lb.)
1/2 tsp. olive oil
3/4 C. low-fat ricotta cheese
2 T. gorgorzola cheese ( or other blue cheese) Crumbled
1/4 c. chopped fresh chives
1 T. each minced fresh basil leaves & parsley
1/2 t. minced fresh rosemary leaves
salt

Cut garlic head in half crosswise. In 8 x 9 square pan, smear oil in small area and set garlic halves, cut side down, on oiled section. Bake in a 375 oven until garlic is soft when pressed and cut sides are browned, about 40 minutes.
Let garlic cool, then squeeze cloves from skin and discard skin. In a bow., mash cloves smoothly, then add ricotta cheese, gorgorzola cheese,chives, basil, parsley & rosemary and mix well. Add salt to taste. Spoon into serving bowl. Makes about 1 cup. Enjoy!
