3 cups mixed whole nuts (your favorites)
1 pound pitted whole dates
1 cup red candied cherries
1 cup green candied cherries
4 ounces citron
1 cup pineapple
¾ cup sugar
¾ cup flour
½ teaspoon salt
½ teaspoon baking powder
1 teaspoon vanilla

Directions:
Directions:
Preheat oven to 300º. Mix nuts and fruit with dry ingredients. Beat eggs and vanilla until foamy. Mix with the fruit mixture. Grease two loaf pans. Line with parchment or waxed paper and degrease. Fill and bake 1¾ hours. Cool on racks. Cover with a paper towel soaked in brandy or orange juice. Wrap in plastic wrap and foil. Open after 2 weeks and soak again.
