1 large egg (MUST BE ROOM TEMPERATURE)
1 Tbsp lemon juice or apple cider vinegar
1/4 tsp dry mustard
1/4 tsp mineral salt
1 cup avocado oil
pinch of white pepper or garlic powder, optional

Directions:
Directions:
Place the egg, lemon juice, dry mustard, and salt in a wide-mouthed jar or tall cup.
Pour oil over egg mixture gently; do not stir.
Place immersion blender at the bottom of the jar and start blending on low.
Once the bottom emulsifies and turns creamy, about 10 seconds, slowly lift the blender upward to incorporate the rest, about 30 seconds.
Store in a sealed glass jar in the refrigerator for up to 7 days.
