Southwest Chicken Strips with Vegetable Medley Recipe

Ingredients: 4 chicken breast , cut into strips 2 cups flour with salt and pepper 2 eggs 2 cups milk Salt and pepper 1 onion, diced 2 small cans chopped green chilies 1-1½ cups melted butter
Medley 2-3 large potatoes, peeled and cut into chunks 1-2 carrots or mini carrots, raw 1 onion, chopped 1 zucchini squash, sliced 1 yellow squash, sliced 2 cans green beans, drained 1 pkg bacon 1 + stick of butter

Directions:In large baking pan layer potatoes, carrots, onions, zucchini, yellow squash and green beans. Salt and pepper on top. Place slices of butter over vegetables. Place bacon slices across vegetables. Cover with foil ( not touching bacon) Bake at 400º for 1½- 2 hours or until vegetables are done.
While vegetables are cooking, place flour with salt and pepper in one bowl and beaten egg with milk in other bowl. Heat griddle or skillet. Add thin layer of butter in skillet. Dip chicken strips, one at a time, into milk mixture and then flour (covering well) and then add to pan. Drizzle a little butter on top. When golden brown turn over. Add more butter as needed. Put some onions and green chilies on top of chicken. Continue cooking until done. Cook all chicken in this manner.
When medley is done, remove from oven. Can serve with chicken on top or separately. Ranch dressing is great with this meal. Also, the chicken is a fantastic topping for a salad. |
