1 c. water
1/3 c. lime juice
1 clove garlic, finely chopped
2 tsp. salt
1/2 tsp. black pepper
1 lb. Shrimp, raw, cleaned and peeled
1 avocado, peeled and chopped
1/2 red pepper, finely chopped
1/2 green pepper, finely shopped
1/2 med. red onion, finely chopped
3-4 Roma tomatoes, seeded and chopped
2-3 tbsp. fresh cilantro, chopped

Add water, lime juice, garlic, salt and pepper to sauce pan and bring to a boil. Allow to reduce until you have 2/3 cup. Add shrimp and cook 3 minutes or until just done. Remove shrimp with slotted spoon and allow to cool. Reduce the remaining liquid in the pot until you have 2 tbsp. Allow to cool

In a bowl, mix the remaining vegetable ingredients. Add the cooled shrimp and the remaining liquid

Allow to marinate for several hours. Serve with tortilla chips or on a bed of lettuce.
