½ cup flour
1 teaspoon salt
1 teaspoon paprika
¼ teaspoon pepper
Your favorite chicken pieces (legs, thighs, breasts)

¼ cup butter
¼ cup Crisco shortening
You may have to double this if you are cooking a lot of chicken.

Mix dry ingredients in a large zip loc bag

Warm ¼ cup butter and ¼ cup crisco shortening in 9x13 oblong pan in the oven until butter & crisco are melted

Heat oven to 425º
Put several pieces of chicken into the bag to coat well. Place coated chicken skin sides down in the baking dish.
Cook uncovered 30 minutes.
Turn chicken; cook uncovered about 30 minutes longer. (Meatier pieces will take 30 minutes, but skinnier pieces will get done before 30 minutes).

I usually plan on doubling all the dry ingredients, Crisco & butter because I make a lot of chicken when I make it for large groups.
Also, doubling the butter & Crisco ensure there will be a lot of drippings to make gravy!

For gravy, dissolve 2 tablespoons corn starch in 1 cup milk. After removing fried chicken from the baking dish, pour in milk mixture and stir until it begins to bubble. Stir until mixture thickens. Sometimes, I spoon off extra liquid fat around the edges of the gravy. Also, salt & pepper to taste.
