For the Sofrito:

1 onion
1 bell pepper
6 cloves garlic
0.5 cup chopped cilantro

For The Beans

2 tsp olive oil
3 1 oz can red kidney beans
1 cup canned tomato sauce
3 tbsp achiote
1 tbsp adobo
2 bay leaves
1 tsp oregano
1/2 tsp white pepper
1-3 tsp cayenne pepper, to taste
salt, to taste
black pepper, to taste

Directions:
Directions:
Finely chop cilantro and put into food processor. Then roughly chop the other ingredients for the sofrito and add to food processor. Blend until chunky with a slight amount of liquid.

To a heated, oiled, pot add the contents of the food processor and cook for 2 minutes. Add the cans of beans along with the tomato sauce, achiote, adobo, bay leaf, oregano, a pinch of salt, white pepper, and black pepper to taste.

Turn heat to boil, bring down to simmer, cover, and cook for 15-20 minutes. Once done add the cayenne and stir. Serve!
