3 cups long grain rice
2 cups assorted frozen veggies (peas, corn, carrots)
2 small onions
2 tbsps adobo puertorriqueño
4 cups vegan chicken broth
2-3 tbsps butter
1 tbsp achiote oil
avocado and cilantro for garnish

Directions:
Directions:
Heat instant pot with butter on sauté function. Roughly chop onions and add to heated pot along with the assorted vegetables. Once the vegetables cook until fragrant and the onions are translucent, add the rice to the pot and stir along with the achiote oil. Toast rice for about 2 minutes before adding the adobo and vegan chicken broth, making sure to stir together. Seal lid, set to manual, and cook for 6 minutes. Once timer goes off allow for natural release for 4 minutes. Open, fluff, garnish with cilantro and avocado, and serve.
