2 pears peeled, cored and cut into small chunks
½ mango peeled, seeded ad cut into small pieces
⅓ cup yellow pepper finely chopped
½ cup red bell pepper finely chopped
3 tsp cilantro fresh and finely chopped
2 tsp vegetable oil
lemon juice to taste
salt to taste

Directions:

Mix all ingredients in a bowl and refrigerate in a covered container for at lease 30 minutes or up to 3 hours before serving.
Serve with tortilla chips, quesadillas or grilled/roasted meat or fish
