3 C. AP Flour
1/3 C Sugar
1 TBS Baking Powder
1 C Butter - COLD
2/3 C Heavy Cream
1 Large Egg
3 TBS Lemon Juice
2 TBS Lemon Zest

Lemon Glaze
1 1/2 C powdered sugar
2-4 TBS Lemon Juice
Lemon Zest to garnish

Directions:
Directions:
1. Preheat oven to 350º F. Line a large baking sheet with parchment paper.

2. Take your butter and cube it up. Place back into the freezer.

3. Large bowl, combine flour, sugar and baking powder. Whist together, then add lemon zest.

4. Blend butter into dry mixture until it is crumbly.

5. Separate small bowl, beat egg and cream. Add in lemon juice. It will sour the cream and curdle. Don't worry.

6. Add wet ingredients to dry ingredients until just mixed.

7. Turn out onto lightly floured surface. Press into desired shape, 1" thick.

8. Cut into equal sizes. Place on baking sheet 2" apart.

9. Brush top (top only) with heavy cream. Sprinkle with raw sugar. Place into freezer for at least 30 min.

10. Cook 17-20 min until browned on top.

11. Cool completely.

12. Top with lemon glaze if desired.
