2-3 bell peppers of choice
1/2 shallot or onion
1 T minced garlic
1 T olive oil or avocado oil
1 T taco seasoning of choice
1 egg
1 lb ground beef or ground chicken
1/2 cup shredded cheddar cheese

Directions:
Directions:
Cut the top off the bell peppers and hollow out. Then cut into about 1" thick rings and set aside. Finely chop the shallot and sauté. After about a minute, add minced garlic. Continue to saute for 1-2 minutes.
In a bowl, combine ground meat, cheese, sautéed shallot and garlic, egg, and taco seasoning. Mix thoroughly.
Add 1/4 of the mixture to each bell pepper ring. Mixture fills 7-8 bell pepper rings. Cook on a flat top or skillet.
