4-6 bone-in pork chops
1 sm shallot
1/3 cup white wine (pinot grigio), optional
8 oz package sliced mushrooms
2 T minced garlic
2 cups chicken stock
1 cup parmesan cheese
2 cups heavy cream
1 T cornstarch
1 T cold water

Heat the skillet or cast-iron pan up to medium-high. Season pork chops (we used Kinders© buttery steak house and roasted garlic, and brown butter seasoning). Sear both sides of pork chops in butter until there is a nice crust, then remove from the heat.
Sauté mushrooms and shallots in more butter. Once mushrooms are soft, add garlic and continue to saute for 1-2 minutes. Season with SPG. De-glaze the pan with white wine or chicken stock, scraping up all the bits. Add heavy cream and chicken stock. Add a slurry of corn starch and water, and parmesan cheese. Once a simmer is achieved, add the pork chops back into the mixture to finish cooking.
Cook pork chops until internal temp is 145º. If a thicker sauce is desired, add equal parts cornstarch and cold water.
