8 cups rhubarb, chopped
2 stalks celery, chopped
2 cloves garlic, minced
1 c water
1 onion, chopped
1 ⅓ c white vinegar
1 ⅔ c white sugar
2 tsp cloves
¼ tsp cinnamon
¼ tsp nutmeg
2 tsp
½ tsp pepper

Directions:
Directions:
Combine rhubarb, garlic, celery, onion, and water. Cook until soft.
Add remaining ingredients and bring to a low simmer.
Cook on low heat, making sure not to burn, until mixture has reduced to a consistency similar to applesauce.
Blend if necessary.

For canning: While sauce is simmering, start water bath canner. Add jars and bring to simmer. Add lids and rings to separate pot, cover with water and bring to simmer.
When sauce is ready: take jars out of canner. Fill to 1/4 headspace. Wipe rims, add lid and ring, tighten to finger-tightness. Place jars in canner. Bring to boil and boil for 15 minutes. Remove jars from canner to dry towel. Let cool 12 hours. Check after a few hours for seals. Place any unsealed jars into fridge to use quickly.

I use pint jars for this recipe and place any remaining in half-pint jars.
