Cast Iron Skillet (size, your choice)
Small red potatoes (amount depends on servings)
1 head garlic
Parmesan Cheese (grated)
1/2 stick butter, melted
Mozzarella cheese
1/2 c. Zatarain's Seafood Boil Powder Seasoning
Green onions for garnish

*All ingredient amounts are determined by the amount of servings. Adjust to your preference.

Directions:
Directions:
Boil potatoes with peelings, garlic (whole) and Zatarain's Seafood Powder.
Brown butter in skillet, then layer parmesan over it. Use however much you like.
We like it heavy.
Place potatoes onto the parmesan/butter. Flatten down with the bottom of a cup.
Remove garlic from the peelings and mash.
Add 2 T. melted butter t garlic and mix thoroughly. Spread over potatoes.
Add mozzarella over the top.
Bake at 400 Degrees, until crust forms on the bottom of the skillet.
Garnish with green onions and serve.
