1¾ c. flour
1¼ tsp. baking powder
½ tsp. baking soda
¾ tsp. salt
⅓ c. shortening
⅔ c. sugar
2 eggs
1 c. bananas, mashed

Directions:
Directions:

  • Sift flour

  • Measure and add baking powder, baking soda, and salt

  • Cream shortening

  • Add sugar and eggs

  • Mix until smooth

  • Add dry ingredients, alternating with mashed bananas, stirring just enough to combine thoroughly

  • Do not beat!

  • Put in greased loaf pan

  • Bake 1 hour in 350º oven

Note from Vondra: I had wondered why my banana bread never tasted as good as Mom's. When looking through her old recipe cards, I realized her "secret" ingredient was shortening, a.k.a. Crisco! Not healthy, but oh, so good!
