3 tablespoons Soy Sauce
1 Egg
¼ teaspoon Pepper
¼ teaspoon Garlic Powder
¼ cup Cornstarch
1 pound boneless Chicken Breast, cut into 1 inch pieces
2 cups Vegetable Oil
15 ounce can Pineapple Chunks--*save the juice
2 tablespoons Cornstarch
½ cup Sugar
¼ cup Catsup
¼ cup Vinegar
1 tablespoon Soy Sauce
1 medium Green Pepper, cut into 1 inch pieces
Hot Cooked Rice

Directions:
Combine 3 tablespoons soy sauce, 1 egg, ¼ tsp pepper, ¼ tsp garlic powder and ¼ cup cornstarch. Mix well. Add chicken pieces, stirring to coat. Heat oil in skillet (375º). Fry chicken until lightly browned. Drain oil from skillet. Drain pineapple, reserving the liquid. Add enough water to juice to make 1 cup. Add 2 tablespoons cornstarch. Mix well. Combine pineapple, the juice mixture, and sugar, catsup, vinegar, and 1 tablespoon soy sauce. In a medium saucepan, bring mixture to a boil and let it thicken. Stir green pepper and chicken into sauce. Cook until thoroughly heated. Serve over hot cooked rice.
