• All-Purpose Flour: For dredging

Step 1: Prepare Your Chicken Thighs
1. Start by washing your chicken thighs thoroughly.
2. Next, you'll need to remove the skin and bone from each thigh. The skin comes off very easily.
3. For the bone, gently slide a small knife under it and cut along one side. The bone should then come out easily. If there's any remaining cartilage, you can trim it off with your knife. The goal is to get a clean piece of meat without any bone or skin.
4. Repeat this process for all your chicken thighs.
Step 2: Pound the Chicken for Tenderness
1. Lay a piece of food wrap (plastic cling film) on your work surface.
2. Place a few of your prepared boneless chicken pieces on top of the wrap. You can place several at once to save time.
3. Cover the chicken with another layer of food wrap.
4. Now, gently pound the meat. Pay more attention to the thicker parts of the meat and less to the thinner parts, aiming for an even thickness of about 2-3 millimeters across the entire piece. This will create large, beautiful cutlets.
Step 3: Season Your Cutlets
1. Once pounded, salt and pepper both sides of each chicken cutlet according to your taste. This ensures your meat is flavorful.
Step 4: Set Up Your Breading Station
1. Since these cutlets cook very quickly, it's best to bread all of them first before you start frying.
2. Prepare three separate stations:
◦ A plate with flour.
◦ A bowl with eggs, which you should whisk with a fork until smooth and uniform.
◦ A plate with breadcrumbs.
3. Have an empty plate ready to place your breaded cutlets.
Step 5: Breading the Chicken Cutlets
1. Take each seasoned, pounded chicken piece and first dip it into the flour.
2. Next, immerse it in the whisked egg.
3. Finally, coat it generously and thoroughly with breadcrumbs on all sides.
4. Place the fully breaded cutlet onto your prepared empty plate. Repeat for all your cutlets.
Step 6: Fry Your Delicious Cutlets
1. Add a small amount of vegetable oil to a frying pan.
2. Heat the pan over high heat. The pan must be hot because this meat fries very quickly and you want it to remain juicy.
3. Once the oil is hot, carefully place the breaded cutlets into the pan.
4. Fry for about 1 to 1.5 minutes on one side. The goal is for the breadcrumbs to become nicely browned and crispy.
5. Once golden, flip the cutlets to the other side.
6. Fry for about 1 minute on the second side. The high heat and quick cooking time help seal in all the juices.
7. As each batch finishes, transfer the cooked cutlets to a serving plate.
Step 7: Serve and Enjoy!
• The finished cutlets will have a crispy crust on the outside and incredibly juicy, tender meat on the inside.
• When you cut into them, you'll see the meat is very soft and easy to cut. It will look beautiful pink inside.
