116 g cold starter from fridge (4.1 oz)
water 345 grams or 12.2 oz
Flour 566 grams All Purpose or Bread Flour or 20 oz
20g salt try cutting to 10 grams

Directions:
Directions:
Begin with cold hungry starter straight from fridge in a bowl and Add in the water and mix. Add in the flour and the salt.

Mix until all flour is wet, no kneading required, then cover and go to bed. I covered the bowl with plastic and then covered with a towel and put a towel underneath the bowl as well because my kitchen stays pretty cold.

Bulk ferment 12 to 18 hours depending on temp in your kitchen.

The next morning form loaf and let proof 60 to 90 minutes.in a banneton with parchment paper.

Score and move the dough and parchment paper into a cold dutch oven.

Place in cold oven with cookie sheet holding 4 cups of hot water on rack below the dutch oven.Set oven temp to 425.

Bake 58 minutes with the lid ON. Remove lid and bake an additional 12 minutes until desired crust color is reached. Remove to cool on stove top.
