1 ½ lbs. fresh spinach
2 T. butter
1 small onion, finely chopped
1 T. flour
a few sprinkles nutmeg
¾ c. spinach liquid
salt and pepper to taste
1 G Washington's seasoning packet (Get this on Amazon)

Directions:
Wash spinach carefully in cold water, lifting leaves from the water instead of pouring off water.

Discard thick stems.

Cook in 1 cup of boiling water in a covered saucepan for 6 or 7 minutes then drain, reserving the liquid.

Cook onion in butter until transparent, add the flour and blend.

Add spinach liquid and G Washington's seasoning and cook and stir until thickened.

Add chopped spinach, salt, and pepper to taste.

Heat to serving temperature and serve at once.
